Snacks for wine: crispy dried cheese for white, red and sparkling

Cheese with wine is a classic. snEco dried cheese is the same classic, just without the knife, board or fridge: crispy bites of Gouda, Mozzarella, Cheddar, aged Primaggio and blue Blue Royale. Open the bag and your wine snack is on the table, crunchy to the end of the evening.

What snack to have with wine

There’s one rule: the snack shouldn’t overpower the wine, and the cheese should have a character that matches the body of the drink. Light whites and sparkling wines call for delicate milky cheese, medium-bodied reds for slightly salty Cheddar, full-bodied reds and dessert wines for aged and blue cheeses. Dried cheese delivers the same flavours as fresh, only more concentrated: there’s no water, so each bite is the “essence” of the cheese. The serving is smaller too: 28 g of dried cheese equals roughly 70 g of fresh.

Wine snEco cheese Why it works
Dry white: Sauvignon Blanc, Riesling, Chardonnay Mozzarella, Gouda the wine’s acidity plus the cheese’s creaminess — a combination that never fails
Sparkling: Prosecco, Cava, Champagne Primaggio aged salty cheese brings out the bubbles — on the same principle as Parmesan with Champagne
Rosé Gouda + hazelnut nuts and soft cheese support the berry notes of rosé
Medium-bodied red: Merlot, Chianti, Pinot Noir Cheddar the wine’s tannins and the cheese’s saltiness work as a pair
Full-bodied red: Cabernet, Malbec, Syrah Smoked Sulguni, Smoked Emmental smokiness and a rich flavour stand up to the weight of the wine
Sweet and dessert: Sauternes, port, ice wine Blue Royale blue cheese with sweet — a rule that works in dried form too

For wine: the basic set

A dried cheese board in 2 minutes

  1. Three or four flavours of different intensity: mozzarella or gouda (mild), cheddar (medium), Primaggio (aged), Blue Royale (blue). One 28 g or 14 g bag of each.
  2. Something sweet: honey, figs, grapes, dried apricots. Sweet goes with aged and blue cheeses.
  3. Something crunchy and salty: crispy dried olives and nuts. No need for croutons — dried cheese is crunchy on its own.
  4. Arrange from mild to strong clockwise, as on a classic board, so guests taste them in the right order.
  5. Don’t take it out in advance: unlike fresh cheese, dried cheese doesn’t need to “warm up” — it’s ready right away and doesn’t sweat on the table.
For two, 2–3 bags of 28 g are enough; for a group of 4–6 people it’s more convenient to get OPTIMAL set or 500 g pack of your favourite flavour.

A wine snack that doesn’t spoil

Fresh cheese for wine has to be bought today, eaten today and kept in the fridge until serving. Dried cheese keeps in the cupboard for 18 months, so “wine and cheese tonight” no longer requires a trip to the shops: a few bags in a drawer — and a wine evening is ready any day. For wine bars and restaurants, it’s also a way to serve a cheese snack without write-offs or refrigeration — terms for venues are on the page for HoReCa.

For whisky, cognac and spirits

For whisky, go for smoked flavours — smoked Sulguni or Emmental: the smokiness meets the peaty and oaky notes. For cognac and brandy — Primaggio and Blue Royale. With a gin and tonic, something neutral is better: Gouda or Mozzarella. More in the article cheese snacks for beer, wine and coffee.

Questions about cheese with wine

Which cheese to serve with red wine?
With Merlot, Chianti and Pinot Noir — Cheddar; with full-bodied Cabernet, Malbec and Syrah — smoked Sulguni or smoked Emmental; with dessert wine and port — Blue Royale.
Which cheese goes with white wine?
Mozzarella and Gouda: a creamy, mild cheese works well with the acidity of Sauvignon Blanc, Riesling and Chardonnay.
What to serve with sparkling wine?
Primaggio — an aged salty cheese brings out the bubbles on the same principle as Parmesan with Champagne.
How much cheese do you need for a wine evening?
For two — 2–3 bags of 28 g in different flavours (roughly equivalent to 150–200 g of fresh cheese). For a group — the OPTIMAL set of 6 bags.
Do you need to take dried cheese out in advance, like fresh cheese?
No. It doesn’t need to “warm up” to room temperature — it’s ready straight from the bag and doesn’t sweat on the table.
What can replace croutons on a cheese board?
Dried cheese itself — it’s crunchy. Add crispy dried olives, nuts, honey and figs.
