When you love what you do, your passion rubs off on others, and in such cases production turns into magic – that is how the staff of the Kharkiv company Prime Snack, half-jokingly but not entirely, describe their work and what they do best. After the start of Russia’s full-scale war against Ukraine, the company moved from Kharkiv to Mukachevo, where it now makes its unique puffed dried cheese.
And it all started with an idea of two brothers who wanted to find a convenient way to take cheese with them on mountain hikes.
“It was my hobby – I made cheese at home, for myself, for friends, for relatives. Then we looked for options and found one: the principle NASA used in the 70s when sending astronauts into orbit. The goal was healthy food with as little weight as possible, so the moisture had to be removed. And from some foods you can’t remove moisture by ordinary thermal convection. Take cheese, for example: as soon as it heats up, it melts, the fat separates, and it doesn’t dry, it just melts,” says Pylyp Gryshyn, co-founder and technical director of Prime Snack.
